According to tradition, the dish was created in the 20th century and is related to the ritual of the popular cult of Sant&#8217;Antonio Abate, celebrated on 17 January, which marked the end of the period of slaughtering pigs.<\/p>\n<p>Legend has it that the cazoeula is born from a Spanish soldier fallen in love with a young woman from Milan, Chef of a noble family, taught the recipe and then the young man brought up successfully the dish to his employers.<\/p>\n<p><strong>The main ingredients are:<\/strong><\/p>\n<ul>\n<li><strong> the cabbage<\/strong> to be used only after the first frost.<\/li>\n<li>The <strong>less noble parts of the pig<\/strong> as the rind, the muzzle, legs, head and ribs.<\/li>\n<li><strong>Personal touch<\/strong> of creativity in the kitchen.<\/li>\n<\/ul>\n<p>The restaurants who will compete to win the trophy &#8220;<strong>Golden Cazoeula 2019<\/strong>&#8221; will be roughly forty and your judgment will be decisive.<\/p>\n<hr \/>\n<h3>To express its vote is necessary:<\/h3>\n<ol>\n<li>Choose your favorite restaurant.<\/li>\n<li>Fill in the evaluation form which you will find attached to brochures and deposit it in the ballot box provided by the restaurant.
